Best of Both Worlds – Barbecue Chicken Pizza Bagel

You ever have moments where you get weird AF cravings? Gurl, I get them all the time! Some days, I just throw together a meal from what I have in my pantry. Other days, I take the time to plan out what I should include in said Frankenstein meal and how I should go about cooking it.

So what I’m about to share is a recipe I concocted while I spent Easter alone in my sorority house – a combination of Barbecue Chicken Pizza and Pizza Bagels (who woulda thunk?)


BARBECUE CHICKEN PIZZA BAGEL

Prep Time – 10-15 minutes | Cooking Time – 15 minutes

INGREDIENTS

  • 1 chicken breast* (or protein of your choosing)
  • 1 bagel of your choice
  • ¼ cup of red onion
  • ½ cup of spinach
  • ¼ blend of cheese*
  • 1 to 2 tbsp of barbecue sauce (any kind that suits your fancy)

DIRECTIONS:

  1. Pre-heat the oven to 425˚F. In a medium non-stick pan, cook the chicken until fully well-done. Remove from the pan and shred the breast to your liking.
  2. Using the same pan from earlier, cook the onions and spinach until soft. Add the chicken into the mixture and let the ingredients blend. Then, add 1 tbsp of the barbecue sauce to the mixture.
  3. While protein and vegetables are cooking, cut the bagel in half and place in the oven once it reaches 425˚F. Leave in the oven for about 5-10 minutes.
  4. Once your pizza topping mixture is cooked, remove the bagel halves for the oven and spread with the remaining barbecue sauce. Divide your topping mixture in half and pile onto the sauced up bagel.
  5. Sprinkle any type of cheese you want onto your pizza bagels. Now that they are ready to get all pizza-like, place your meal back into the oven. Let cook for 10 minutes.

IMPORTANT NOTES:

Like the chili recipe, the ingredient list for the barbecue pizza bagels can vary based on dietary needs or whatever you choose to top it with. You can sub out the chicken and cheese with any vegetarian or vegan alternatives, and you can add on or remove any vegetables you desire.
